This is my first
Martha Stewart Cupcakes Club in a really long time. I joined the club right at the beginning, but lost interest when I wasn't enjoying the product I was making from the cookbook. Well, this month wasn't the best time to start up again. The cupcakes turned out dense and heavy just like a muffin. I find a lot of the recipes for the cookbook are like this. There is a HUGE difference between a cupcake and a muffin. The first and foremost is the density of it, if it's dense it's a MUFFIN. I made the cupcakes for my students and at least they enjoyed them.

ReplyDeleteI'm with you on these...and I had made them before...so I did a variation on the yellow buttermilk cupcake which was really tasty. A definite cupcake,not a muffin.
ReplyDeleteyeah i agree with you with scratch recipes it is really hard to find a real good fluffy scratch cupcake thats why i do the scratch cake using a cake mix. :)

ReplyDeleteSo glad you could join us again! At least you had some eager takers! I, too was surprised at the density considering it had cake flour and egg whites! I hope you'll bake next month. I've been looking at that picture of the sugared hazelnuts ever since I bought the book!
ReplyDeleteI was wondering about the texture- but I had used all-purpose flour and thought that might have been the culprit. I wasn't able to try any (all were taken to my son's class party.) Welcome back, and let's hope the next cupcake works out better!
