Red Velvet Whoppie Pies

I first made these whoopie pies quite a while ago. Unfortunately, most of the pictures taken with my camera didn't turn out as it was in the bottom of my purse with a broken container of apple sauce. Luckily I took a couple of pictures with my iPhone. These whoopies pies were really good, I took them in to all of my co volunteers at Pride Toronto and they were devoured, I had a hard time getting them there without people eating them.

I used the recipe from the Food Network Kitchens and didn't make any big changes except the amount of food colouring. I've come to the conclusion that you don't need to use as much food colouring as many recipes call for. I still got a good red hue with half the amount of food colouring. Next time, I want to try natural food colouring or beets.

Friday Favourites

Hello Everyone, how was your week?  Well mine was pretty good at the beginning with over 400 views on one day of my Cadbury Creme Egg snack cake post, but a migraine took over the rest of my week and landed me in emerg today so my Friday Favs is a little late.

Check out this pretty cool stuff I found this week

  • Sweet Avenue Bake Shop from NJ has decided to pay homage to one of my favourite movies (Willy Wonka, the one with Gene Wilder) and has made Fizzy Lifting Drinks cupcakes, OMG!!!
  • My favourite band of the moment Sleigh Bells, has a great new video for Rill Rill.
  • A flickr group I found (well they found me) started by A Baked Creation for pictures of Whoopie Pies.
  • I know this was from last spring but I love it and have been waiting a long time to make it.  From Whisk Kid the multi-layed rainbow cake.

Another super exciting thing happening is I'm getting an early birthday present...wait for it...a cricut cake.  I'm so excited, I've already got three cartridges (including a Hello Kitty one).  Super super excited, I will be posting about that as soon as I use it.

I hope everyone has a great weekend!

Enjoy

S'more Whoopie Pies

Wow I must really love s'mores this post and my last are about them but this time it's whoppie pies.

I made these pies for a friend Enuka Okuma while she was finishing the sound her new short called Cookie.  Both the movie and the whoppie pies turned out great.  My only issue was with the marshmallow filling called for shortening which I found the taste DISGUSTING and made a pact with myself never to use shortening again, only butter :).

I got the recipe from the great book Whoopie Pies by Sarah Billingsley and Amy Treadwell.  I love all the little notes at the front of the book.  It took me quite awhile to get this book, I kept seeing it at the bookstore and finally decided to get it, I'm glad I did.

The whoopie pie is a graham flour base with chocolate ganache and marshmallow filling. I'd write the recipe out but it's quite long, just go buy the book instead.
